Now than the temperature is high, and we can’t visit a Greek island, yet, because of the covid-19 pandemic, we will bring the Greek summer to our homes by making saganaki shrimp!🍤
Ingredients
- 4 tbs extra virgin olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 ts dried oregano
- 1/2 ts pepper
- 1/2 ts sea salt
- 2 cups chopped peeled tomatoes
- 1 cup red pepper “florinis”
- 1/4 cup white wine
- 12 medium shrimps
- 2 tbs minced fresh parsley
- 1 cup crumbled feta cheese
To start, heat the olive oil in a wide oven-proof skillet over low heat and add the onion and garlic. Cook by stirring occasionally, about 7-8 minutes. Also add the tomatoes and red peppers, salt & pepper. Bring to a boil by adding the wine and then reduce the heat to medium-low and cook by stirring occasionally, until the sauce is thickened up, about 20 minutes.
Then off the heat and arrange the shrimp over the tomato sauce in an even layer. Crumble the feta over the top and then sprinkle with dried oregano. Bake for 15 minutes and then, using an oven mitt, transfer the pan to the higher oven rack and broil for 2 minutes.
Lastly, spread some fresh parsley and serve immediately to enjoy one of the most famous Greek appetizers of summer!
